How many nights have we come home after a long day of work and kids activities and just dreaded the thought of having to get dinner in the oven? These are usually the times when it just feels so much easier to run through the drive-thru or get out the take-out menus. Luckily we are here today with the quickest, easiest recipe that you can get in the oven in a matter of minutes. Use the cook time to help the kids with their homework or spend time together as a family and then in one hour you will have a delicious, healthy meal that literally took no time to prepare.
Apple Cinnamon Pork Loins from APC Empowered Health on Vimeo.
Ingredients:
4 cuts of pork loin (thin or thick cut)
2 large sweet potatoes cut into chunks
2 Gala apples cut into slices
Cinnamon
Salt and Pepper
Preheat oven to 4oo degrees
Salt and pepper pork and place in an ungreased 9 by 13 baking pan
Add sweet potato chunks and apple slices
Sprinkle everything with cinnamon
Add enough liquid (water or apple juice) to cover the bottom of the baking pan
Cover with aluminum foil and place in oven for 1 hour
Tip: Rather than cook everything in the oven, throw it all in a crockpot and cook it on High for 4 hours.
Whether you reduce the recipe size or increase the recipe size, the cooking temperature and time remain the same. If you reduce the recipe, just reduce the size of the baking pan and if you increase the recipe, just increase the size of the baking pan or use two 9 by 13 pans.
